Honey BBQ Chicken Wings

Do you know that feeling when you’re craving something but you want to cook it in a different way and you don’t know how?

That’s what happened with the chicken wings. I’ve been wanting to eat them for a while now, but I didn’t want to just fry them (too much oil!). I was thinking about doing them with some sauce but I just kept postponing it because of both lack of time and some laziness (let’s be real).

The other day we finally bought some chicken wings and yesterday I had to cook them, so I looked up some easy recipes for the sauce. Honey + BBQ sauce. What’s not to like in that? :D It didn’t take long to cook and it was amazingly good. This recipe is going to be with me for a long time!

I used the recipe from A Night Owl Blog, and a tweaked it a little.

The other day we finally bought some chicken wings and yesterday I had to cook them, so I looked up some easy recipes for the sauce. Honey + BBQ sauce. What’s not to like in that? :D It didn’t take long to cook and it was amazingly good. This recipe is going to be with me for a long time!

Preheat the oven to 425ºF.

Mix the flour, salt, garlic powder and black pepper.

Rinse the wings and dip into the flour mix until coated. Place them in a cookie sheet and cook for 35-40 minutes.

Prepare the sauce by mixing the ingredients in a small pot and cooking in low heat.

When wings are done baking, you can either dip them in the sauce and put back in the baking sheet, or simply pour the sauce on top of the wings. Make sure they are well covered in the sauce. Let cook in the oven for another 5 minutes.

Spanish Omelet aka Tortilla de Patatas

Is it already February? I know I keep saying that time seems to fly, but it actually does. Maybe that’s because I’ve been abnormally busy the last few months, but it seems like we just started 2016!

Last week (in The Week in Pictures‘ post) I told you that I would post the Spanish Omelet (aka Tortilla de Patatas) recipe. It is pretty simple (you most likely already have all the ingredients needed in the pantry) and one of my all time favorites. I hope you like it too!

Here’s the list of ingredients that you will need.

Start by peeling the potatoes and cutting them into small slices or cubes.

Fry the potatoes in a pan with olive oil until they are done. We don’t want them crispy, though, so keep an eye on them. I usually cook them on a medium temperature.

In the meantime, peel the onions and chop them in little pieces. Grill them until they are soft and a little transparent.

When done, place the potatoes in a container to mix them with the onions, the eggs and a little bit of salt. If you want, you can drain part of the extra oil by putting the potatoes in a plate with some napkins.

Process followed to cook the spanish omelet

Pour the mix in a pan with a little bit of olive oil and let cook for a few minutes. Carefully turn around the omelet with the help of a plate and let the other side cook for just a couple of minutes before placing it on a plate.

I do prefer the egg not to be completely done so I don’t let it cook for long.

Oven Roasted Chicken Thighs with Potatoes and Orange Sauce

Hello everyone!

With only 3 days left for Christmas, everyone is running here and there to get the last minute presents, right? I have found myself a couple of years going shopping the same Christmas Eve. I know, I am a pro in that procrastination thing. This year, however, we’re skipping the Christmas shopping for budget purposes, and since the only family that I have here are my in-laws, the holidays are going to be presents-stress-free.

Today I’m coming to share a recipe. It’s been a while since I wrote one (where is that December Goal?).

Oven Roasted Chicken Thighs with Potatoes and Orange Sauce

As we’re not fans of turkey in my house, I was looking for some new recipes of oven roasted chicken and I found this one. Needless to say it was very tasty and it didn’t last long. I always love the smell coming out of the oven when you’re cooking something. It is best way to get the appetite coming, right? And when guests are coming in and you start receiving compliments it feels pretty good. Who doesn’t like to receive compliments?

This is the list of ingredients that you will need:

Start by covering the bottom of the tray with oil and salt. Peel and cut the potatoes and the onions and place them in the tray. Put a little more oil, salt and the chosen spices on top of the onions and potatoes.

Turn the oven up to 350ºF.

Clean with water one of the oranges, slice it and place it on top of the potatoes and onions. Use the second orange to extract the juice.

Place the chicken thighs, put a little more oil, salt and spices.

Pour the beer and the orange juice in between the potatoes.

Cook for about 45-60 minutes, until the potatoes have a golden color and the chicken looks crispy.

Remember to always cook the chicken with the skin, even if you don’t like to eat it. Otherwise the meat will dry out during the process.

Stuffed Eggs

Happy Sunday everyone!

The appetizer that I bring you today is one of my favorites. It’s also one quick and easy plate that we usually prepare whenever my family gets together for lunch or dinner.

The recipe that I’m posting below is the basic one and the one that I use most often, but the possibilities are pretty much infinite, as you can add crab sticks, cheese, peppers, olives or whatever you like to personalize and give your touch to this plate. Get creative!

Depending on the amount of eggs that you cook, you might have to add more tuna. I used a can of tuna for 2 eggs.

Boil the eggs and cut them into halves after peeling them. Carefully, separate the yolk and put them in a cup. Then, add the desired amount of mayo and tuna (and other ingredients if you’d like to) and mix well.

With a spoon or a fork fill the egg-halves with the mix… and voilà! I put some cheese on top of two halves and it was really good too.

Don’t worry too much if the eggs break a little when pulling the yolk out. The most important thing is how it tastes, right? 😉

Spaghetti with meatballs: My mom’s recipe

To be honest, there is only one recipe of meatballs that I use, and that’s my mom’s. Maybe that’s because it’s super simple. Or because I’m lazy to look for another recipe. Or both.

  • Ground meat. I usually buy pork and beef and mix them. I like the taste better.
  • A cup of milk
  • Around half a cup of breadcrumbs. I just adjust it when mixing.
  • One egg
  • A pinch of salt, black pepper, ground garlic (the spices that you like best)
  • Flour. You’ll use it before frying the meatballs

Combine all the ingredients together. I use my clean hands because I find it easier, but you can use a fork, spoon… Next, make the balls the size you prefer. I don’t like to make them too big because it takes longer to cook and you don’t really know if they are going to be done in the inside. Before frying them on a pan cover them with some flour.

A couple of minutes on each side (check that they get darker) should be enough. Keep them on a container with a lid so they stay warm.

For the spaghetti (sorry I don’t have pictures of this part), put some water to boil on a pot and place the spaghetti inside. Stir every once in a while so they don’t stick to each other and they cook well. They should be done in 10-15 minutes. To know if they are cooked you can try and cut one of them with a wooden spoon. If it is hard to break means that it is not done. I like them to be in a soft al dente, which means that they are still a little hard but cooked.

Once the spaghetti are done take off the water from the pot and pour the tomato sauce of your choice while stirring. You can place the meatballs in the pot too or just leave them in the container so anyone can serve themselves.
