Easy NY Cheesecake

Last year I baked this cake for my husband’s birthday at the end of May, and it was so good that it has become one of our favorite cakes.

When I was little I was basically running away of anything that had cheese, even if it was just on the name. I didn’t like it. Even if I hadn’t tried it.

Today it’s not that I’m a fan of anything cheese, but I have come to peace with it. And I absolutely LOVE a good cheesecake.

This recipe is very easy to follow and put together. It doesn’t take much time either, although it is better if cooked for the next day so the cake rests in the fridge overnight. I wouldn’t blame you if you couldn’t resist the temptation and eat some when it cools off, though! Haha

We are going to start with the base of the cake: the cookie dough. Crash the crackers using a food processor (easy and fast way) or with your hands. Melt the butter and mix it with the crackers. Put the mix in a round baking pan (20-24cm diameter) and press onto bottom. Leave in the freezer while we prepare the cake mix.

In a bowl, mix cream cheese with sugar, greek yoghourt, vanilla, lemon juice and flour until you have a cream. Incorporate the eggs, one by one, without mixing too much.

Pour this mix into the cookie dough and bake 10 minutes at 200ºC (420ºF), then drop to 90ºC (200ºF) for 30 more minutes. Let cool in the oven for a few hours and then leave in the fridge for a couple of hours (you can leave it overnight too).

Before eating it, put the marmalade on top of the cake.

Melt the black chocolate on the microwave. To be sure the chocolate doesn’t burn, put it 30 seconds, stir it and put it another 30 seconds. Repeat the process until it is melted. You can also add a little bit of butter so the chocolate melts easier and doesn’t get burned.

Smash the banana and add it slowly to the chocolate, mixing everything. Then add the vanilla extract and the oats progressively and mixing well.

Let the mix chill and make little balls with the help of two spoons. Place the balls on a tray covered with parchment paper. Let chill on the fridge for 30 minutes.

Pour a bit of cocoa powder in a bowl and cover each ball with it.

If you don’t want to eat them right away, keep them in the fridge.

If these didn’t cheer you up… think that there are just a few more hours of Monday left. Before you realize, you will be off work and enjoying the evening.

One of the things that you could decide to do to make up for the day is cook this amazing pound cake. I am telling you, you will be enjoying it way before it is done! Just wait ‘til the dough is in the oven and the smell spreads around the house.

For this recipe you will need

Pound cake ingredients

Preheat oven to 325º. Sift the flour and add sugar, butter, milk, eggs and vanilla (in that order). Mix until the dough is well blended together.

Pour and bake for 1h 30 mins or until the cake is baked. You can check sticking a knife in the cake; it will be cooked when the knife comes out clean.

Let cool 10 minutes before removing from pan.

This recipe is very easily customizable: you can add chocolate chips, raisins or fruit to the mix before cooking, and you can cover the cake with chocolate ganache or any other frosting that you like.

Breakfast Pancakes

There is no doubt that my favorite meal of the day is breakfast. And every once in a while I prepare some quick pancakes that I eat with jam, hone, syrup, nutella… actually, they are good with anything LOL

Quick Breakfast Pancakes

To make the easy and quick pancakes that I prepare, you will need the following ingredients:

1 egg

4 tbsp of sugar

½ glass of milk

1glass of flour

2 teaspoons of dry yeast/baking powder

Just mix all the ingredients and cook. If you cook them in a pan, you might want to put a little bit of butter so they don’t stick to the surface. This time I did them in an electric grill, so I didn’t put anything.

How do you know when the pancakes are done? It is very easy, as you will see that a lot of bubbles appear on the visible side, and that’s the moment you should turn them around.

As a note, I usually mix double the ingredients. There is never too many pancakes! haha

Banana Muffins

I am going to post some recipes every once in a while so you can try them (if you want to) at home. Also, it would be great if you’d let me know in the comments how you liked it. I’ll try to mix some sweet recipes with “non sweet” ones, but I don’t promise anything LOL

This week’s recipe is… Banana muffins! It takes about 10-15 to get the batter ready for the oven and then 25 minutes to cook. It is really easy to make, so no excuses!

Banana Muffins recipe

For 17 big muffins I used:

330g ripped bananas

220g white sugar

A bit of salt

120g vegetable oil (I used sunflower)

2 medium size eggs

250g all-purpose flour

10g dried yeast

Banana Muffins Recipe

Blend all the ingredients together except the flour and the yeast. When the mix is creamy, add the flour and the yeast, slowly. Make sure that you keep blending so there are no lumps and the mix is smooth. If you want to, you can add some chocolate chips. Chocolate goes well with everything, but the mix banana-chocolate is HEAVEN!! Haha

Distribute the batter in the muffin capsules and cook in the oven at 350ºF (180ºC) for about 25 minutes. Your house will start smelling yummy when the mix starts cooking. You’re welcome!
